Simple and delicious roasted cabbage recipe that’s 21 Day Fix approved, as well as Paleo compliant.
I’ve recently started back on the health bandwagon to lose the rest of my baby weight. I decided I’d had enough of being uncomfortable in my skin, and well, just decided to get started! If you’re following me on Instagram then you already know this! I’ve previously lost a bunch of weight (you can read my first weight loss journey here) but after having another baby I’m carrying around a bunch of extra pounds. The time has come to lose those pounds, and I’m back to clean eating and exercising…yay!
Today I made these insanely delicious roasted cabbage steaks, and for extra yumminess I crumbled some bacon on top. My mouth nearly exploded in happiness at the final result. If you’re on the 21 Day Fix diet, I’ve conveniently calculated the 21 Day Fix container conversions for you.
Roasted Cabbage Steaks – 21 Day Fix & Paleo Friendly Recipe
Here’s what you’ll need to make this amazingness…
– 1/2 head of cabbage
– 6 tsp olive oil
– 2 garlic cloves
– 1/2 small onion
– 1 tsp black pepper
– optional: bacon slices
Begin by slicing your cabbage into 1/2 inch “steaks” or slices. You should end up with 6 slices. Lay them flat onto your baking sheet.
Next, pour 1 teaspoon of e.v.o.o. onto each slice.
Next, chop up the garlic and onion. Sprinkle on top of each cabbage slice. For the sake of my mild OCD (haha)…evenly distribute the garlic and onions to each slice. Then, sprinkle some fresh cracked pepper on top.
Pop your baking sheet into the oven and roast/broil on 550 degrees for 15 minutes. Remove from oven.
Allow the pan to cool for a few minutes, then add 2 slices of crumbled bacon on top of each cabbage slice. If you’re on the 21 Day Fix, 2 slices of turkey bacon = 1/2 protein serving.
