I love good soup recipes, don’t you? Soup recipes are especially good right about now, as the Fall season is upon us. Hearty homemade soups are just so delicious, and they’re perfect for feeding a hungry family quickly and affordably.
This sausage lentil soup recipe blends together bold flavors and delicious ingredients to make a healthy, homemade meal that’s an easy weeknight dinner idea your whole family will love.
Ready to make this homemade sausage lentil soup for dinner this week?
Here’s what you’ll need to get started:
Italian Sausage Lentil Soup Recipe
– 1 12oz package Johnsonville Beef Brats (these have a delicious savory hard-wood smoked flavor that really make the soup awesome!)
– 1 tbsp olive oil
– 2 garlic cloves (finely chopped)
– 1 large onion (diced)
– 1 small zucchini (chopped)
– 2 large carrots (chopped)
– 2 celery stalks (chopped)
– 2 cans diced tomatoes (14.5 oz cans)
– 2 cans precooked lentils (approximately 3 cups – and if you have more time, substitute 2 cups dry lentils)
– 4 cups chicken broth
– salt and pepper to taste
First, brown Johnsonville Beef Brats in a large skillet according to the package directions. Remove from heat, and slice them up.
Next, add together sausage, olive oil, garlic, onion, zucchini, carrots, and celery into a large stock pot with a dash of salt and pepper. Allow these ingredients to “sweat” and soften a bit (on medium heat) for 5 minutes, when you begin to smell the delicious aromas starting to fill the air.
Raise to high heat. Add in 2 cans diced tomatoes, lentils, and chicken broth to the pot. Stir well.
Allow the soup to simmer for about 20 minutes, stirring regularly.
Serve with freshly grated parmesan cheese and some basil on top, and enjoy the deliciousness of this hearty and heartwarming sausage lentil soup recipe!
